The Buck Stops Here is a local butcher and game processing business. The meat and seafood market is located at 56 Talisman Drive, Suite 20 in up-town Pagosa. The game processing plant is located at 10501 W. Highway 160, in the Aspen Springs area.
The market carries a very nice variety of fresh meat and seafood, including beef, pork, chicken, shrimp and fish. They also have fresh cooked food. They sell deli meats and their specialty is smoked pork baby back ribs. Their deli menu includes fresh made sandwiches and subs. Sushi is served on Thursdays and Fridays.

They also carry a large selection of frozen meat and fish and we stock up on their lamb, swordfish, tuna, grouper, etc. They also carry Colorado elk and buffalo. If they don’t have what you’re looking for, they’ll order it for you. They will even slow cook a brisket for you, carve it, package it and keep it warm until you pick it up, so add catering to their list of services. The Buck Stops Here is a family run business. The Schuchart family moved to Pagosa from Pennsylvania and took over the game processing business on Hwy. 160 in 1997. In 2000, they added a fresh meat and seafood market and in 2008, they moved that fresh market to Talisman Drive.
